Meals in Minutes - Light, Bright, and Just Right What’s more fun than spring cleaning? Well, pretty much anything, but especially spring cooking. After the heavy stews of winter, the crisp freshness of spring herbs brings a welcome breath of new beginnings to the kitchen. Along with such harbingers of the season as new potatoes and strawberries,
fragrant fresh herbs reawaken our senses to the pleasures of lighter dining.
Each course of our spring meal features a different fresh herb, and each showcases unique flavors and appearances — feathery dill, parsley-like fan-shaped cilantro, and oval mint. For an easy garnish, save sprigs of each herb to decorate the plate.
