Inspirations - An Inspired Greek Meal
During spring and early summer in Greece, wildflowers, chamomile, poppies, and groves of range and lemon blossoms perfume the swiftly changing landscape. At every opportunity, Greeks abandon the cities and flock to the countryside.
The warm days coax tables outside where meals are enjoyed at a leisurely pace. And since Greeks find piping hot food unappealing and unhealthful, many dishes and courses can be laid on the table all together, without a worry of keeping them hot, and served family style. Instead of a dinner plate, custom has diners using small plates and intermittently filling them with morsels from large platters.
