Chicken Kebabs
Serves 4
1 Box Hannaford Rice Pilaf
1 Large Vidalia Onion
1 1/4 lbs. Boneless Chicken Breasts
1 Yellow Bell Pepper
1 Red Bell Pepper
Preparation Suggestions:
1. Soak wooden kebab skewers in water for at least 20 min. Heat grill to medium.
2. Cook pilaf. Cut onion, chicken & peppers into bite-sized chunks and thread on skewers. Brush with oil and season with salt & pepper, or your favorite flavoring.
3. Grill, turning frequently, until chicken is cooked through, an internal temp of 165º. Serve kebabs with rice.

Shrimp Scampi
Serves 4
1 Stick Hannaford Butter
2 oz. Box Garlic
1 (70/90) Bag Hannaford Cooked Frozen Shrimp, thawed
Juice from 1 Small Lemon
1 Box Hannaford Whole Wheat Spaghetti, cooked
Taste of Inspirations Crusty Baguette
Preparation Suggestions:
1. In a medium skillet, melt butter on low heat. Add garlic and saute for 2 min.
2. Add shrimp, salt & pepper and turn heat up to medium. Cook shrimp until heated through, 2-3 min., stirring constantly.
3. Add lemon juice and remove from heat. Serve over pasta, garnish with parsley if you wish. |
