Marinade/Sauce
|

Step 1.
Toast two teaspoons of sesame seeds over medium heat using a medium-sized skillet. Place toasted sesame seeds in a bowl.

Step 2.
Thinly slice 1/2 cup green onion; add to bowl.
|
 |
 |
Step 3.
Add 1/2 cup soy sauce and 1/2 cup Mirin (sweetened sake) to bowl.

Step 4.
Peel and mince 4 garlic cloves and 4 teaspoons of ginger; add to bowl. Mix ingredients well; set aside.

Filling

Step 1.
Peel 1 cucumber; cut in half and seed. Peel 1 carrot. Shred both the cucumber and carrot; place in a separate bowl and set aside.

Step 2.
Take skin off turkey meat. Pull turkey meat apart to shred, using approximately 1 lb. of turkey. Place in a separate bowl.

Step 3.
Chop 2 Tablespoons mint, cilantro, and scallion; place in bowl with pulled turkey.

Step 4.
Combine vegetables, turkey, and 2 Tablespoons of sauce in a large bowl. Mix well.

Step 5.
Lay a 10 inch tortilla shell flat and place 1/2 cup of mixture on shell.

Step 6.
First fold the left and right side of shell towards the center; then begin rolling from the bottom to the top of the shell. It should look like a burrito.

Step 7.
Place in an ungreased baking pan with the seam-side down. Cook at 350 degrees Fahrenheit for 15 minutes.

Step 8.
Remove from oven; slice spring roll in half on an angle. (When making hors d'oeuvres, make smaller slices-approximately 1 inch apart.)

Garnish
|

Step 1.
Set aside a small dish of sauce for dipping.
|

Step 2.
Garnish by making a rose and palm tree. Carefully peel the skin from around a tomato without breaking the peel; lay flat and roll to form the flower.

Step 3.
Make small slices in the end a green onion and soak in a bowl of cold water to allow ends to fan out.
|
 |
 |
Step 4.
Place garnish and spring rolls on your serving tray along with edible flowers for a welcoming presentation.
