blueberries, which deliver a dose of

sweet, these granola bars are good – and
good for you.
What kids can do
Measure and mix the dry ingredients.
Stir together the wet and dry ingredients.
Press the mixture into the baking pan.
Wrap the cut bars.

1. Place 1 cup pasta in each of 4 separate
plastic sandwich bags and seal or tie with a
twist tie, making sure to squeeze out any
extra air. Reserve. 2. Line up 4 (1 quart) glass jars. Be sure jars
are dry, then layer ingredients as follows:

Alphabet Soup

jar Alphabet Soup Mix
1. In a large pot, bring water to a boil over
high heat. 2. Remove bag of alphabet pasta from the
jar and set aside. Pour remaining contents
of the jar into the boiling water. Stir well
and cover. Lower heat and simmer for
20 to 25 minutes or until the split peas
and lentils are tender, stirring occasionally. 3. Add the alphabet pasta and stir.
Cook, uncovered, until pasta is cooked
through, about 5 to 6 minutes. Serve hot.
Yield: 4 (1 quart) jars dry soup mix (Each jar serves 6 when prepared)
Active Time: 45 minutes
Total Time: 1 hour, 20 minutes
(includes cooking soup)
This layered mix needs only water and a
little time on the stove before soup is served.
You–ll need 4 (1 quart) canning jars with lids,
available in the Gadgets aisle.
Note: Be sure to use quick-cooking barley, as
regular barley takes much longer to cook.

Measure and layer ingredients.

mix, such as Knorr or Lipton

bouillon, such as Herb-Ox brand

(about 1 cup), found in the Spice aisle

cup dried parsley, found in the Spice aisle

cups dry yellow split peas

cups sun-dried tomatoes (dry, not packed
in oil – found in the Bulk section), cut in
quarters with scissors
1. Preheat oven to 350°F. Line a 9-by-13-
inch baking pan with foil, leaving at least
2 inches of extra foil on the two short sides
for lifting out the finished bars. Spray the
foil with vegetable cooking spray. 2. In a large bowl, combine oats, blueberries,
rice cereal, wheat germ, flax seeds, ginger, and cinnamon. Mix until evenly
blended. Set aside. 3. In a microwave-safe bowl, combine the
almond butter, butter, brown sugar, and
honey. Heat for 1 minute and stir well. Heat
for another 30 seconds, stir well, and repeat
if necessary until mixture is uniform and
smooth. Stir in vanilla extract and almond
extract, if using. 4. Add the butter mixture to the oats and
mix thoroughly. 5. Spray one of your hands with vegetable
cooking spray and firmly press the granola
into the prepared pan. This step is very
important because it ensures that the bars
will stay intact and won’t crumble after
baking. Use the back of a soupspoon to
press down as firmly as possible and smooth
the surface. Bake for 16 to 18 minutes, until
the edges are just golden. Watch very
carefully at the end, as the granola goes from
just right to overdone quickly. It still tastes
good overdone, but the texture is drier and
more crumbly. 6. Let mixture cool in the pan on a wire rack
for 1 hour. Then use the foil edges to lift the
granola and gently flip over onto a cutting
board. Peel off foil, being careful not to break
the granola. With a sharp knife, cut into 24
bars. Wrap individually in waxed paper and
store in an airtight container. To package,
stack 6 bars together, wrap in a cellophane
bag, and tie with a ribbon. Or pack in a
container with a lid and top with a bow.
Have kids write the ingredient list on an
index card and include it with the package.
Yield: 4 (8 oz.) jars, 8 (2 Tb sp.) servings per jar

Total Time: 1 hour (includes cooling time)
This sauce is divine over ice cream or
angel food cake. It’s also tasty without the
mint. You’ll need 4 (8 oz.) jelly jars,
available in the Gadgets aisle. Include a
note saying that the sauce must be kept
refrigerated. Recipe may be halved and
may be frozen.
What kids can do
Measure and whisk together sauce base.
Measure chocolate chips and stir them
into the sauce base.
Measure and stir in extracts.
Make labels for jars.

cups semisweet chocolate chips (18 oz.)

tsp. peppermint extract, or to taste
1. In a medium microwave-safe bowl, whisk
together cocoa, sugar, hot water, and corn
syrup until evenly blended. Whisk gently at
first, as cocoa powder can be dusty. Microwave
on high for 1 minute and whisk again.
Heat for an additional 45 seconds, until
mixture is steaming hot and smooth. 2. Add chocolate chips to the cocoa mixture
and stir until they begin to melt, about
11/2 minutes. Microwave the sauce for
30 seconds. Stir well until all the chocolate
has melted and mixture is smooth. Heat for
a few more seconds if needed. Stir in the
vanilla and peppermint extract. 3. Divide sauce among 4 (8 oz.) glass jelly
jars. Place lids on jars after filling with sauce. 4. Allow sauce to cool to room temperature,
about 45 minutes, then refrigerate until
needed. Finished sauce can be stored in a
sealed container, refrigerated, for up to 1
month. Cold sauce will be quite thick; reheat
in the microwave for 10 to 30 seconds on
high before serving.
