Chicken Puttanesca

3 tablespoon olive oil
4 each Boneless chicken breast halves
1 each Medium onion, thinly sliced
4 each Garlic cloves, peeled and halved
28 oz canned diced tomato
1/2 cup nicoise olives, pitted
2 tablespoon Capers, rinsed
3 tablespoon Sun dried tomatoes, coarsely chopped
1 tablespoon Balsamic Vinegar
1/4 cup fresh herbs, chopped (such as basil, parsley, oregano)


Heat oil in large skillet over medium-high heat. Add chicken, skin side down and brown, turning once , 10 minutes. Remove from pan and set aside.
Add onion and garlic, saute until onion is soft and translucent, 5-7 minutes. Stir in tomatoes, olives, capers, sun dried tomatoes and vinegar.
Return the chicken to the pan, coat well with the sauce. Cover the pan and simmer until chicken is tender and cooked through, about 45 minutes. Stir in fresh herbs and serve.
