Rustic Tomato Bruschetta

1 loaf whole-grain bread
1 large fresh garlic clove, halved
6 tablespoons Taste of Inspirations rosemary or garlic olive oil
8 each ripe plum tomatoes, seeded, diced
1 tablespoon Fresh shallots, minced
1 cup Fresh basil leaves, chopped
1 pinch salt
1 dash ground black pepper
4 oz Fresh mozzarella cheese, diced


1. Cut bread into medium-thick slices. Toast or grill them until they are brown on both sides. Rub each slice with garlic. Drizzle toasts liberally with olive oil.
2. Combine tomatoes, shallots, basil, salt, pepper and mozzarella in small bowl. Spoon tomato mixture over bread, serve immediately.
