Grilled Salmon With Honey-Cardamom Glaze

Ingredients

2 tablespoon honey
1 tablespoon orange juice
1 teaspoon ground cardamom (found in organic & natural)
1 1/2 lb salmon fillet, cut from thickest section, skin on
1/2 cup Petite green peas, canned or thawed if frozen
1/4 teaspoon sea salt
2 each scallion, thinly sliced on the diagonal
4 each lemon wedges
Grilled Salmon With Honey-Cardamom Glaze

Directions

1. Place honey, orange juice, and cardamom in a small bowl and heat 10 seconds in microwave to melt honey. Whisk well to blend ingredients.
2. Preheat grill to medium high. Place the salmon skin side down on a piece of aluminum foil and brush with half the glaze. Place foil with salmon on the grill and cook for 10 to 15 minutes, depending on thickness, or until fish becomes opaque. Brush with remaining glaze halfway through cooking time.
3. Right before the salmon is done, heat peas in a microwave just until warm, about 30 seconds.
4. When fish is done, divide into 4 pieces. Lift the salmon off the skin and transfer servings to plates. Season with salt and scatter with peas and scallions. Garnish with a lemon wedge and serve.
