Graduation Day Cupcakes with Caramel Buttercream

1 cup unsalted butter, softened
3 3/4 cup Hannaford Brand confectioner's sugar, sifted
1 teaspoon vanilla extract
1 to 2 tablespoon sundae caramel topping
1 tablespoon chocolate sprinkles or shavings


1. Prepare cupcakes according to package directions. Cool completely before frosting.
2. In a large bowl, with electric mixer at low speed, combine confectioner's sugar, butter, vanilla and syrup until blended. Increase speed to medium and beat for another 2 minutes adding more caramel syrup if necessary for spreading consistency.
3. Using a piping bag with decorative tip, pipe frosting onto cupcakes. Sprinkle with chocolate shavings and serve.
