2 cups diced fresh tomatoes, (1/4-inch dice; about 3 medium tomatoes)
1/2 cup finely minced red onion
1/2 each Jalapeno pepper, seeded and finely minced
1/3 cup Chopped fresh cilantro
1 1/2 teaspoon Fresh lemon juice
1 pinch salt
1 pinch Black pepper, freshly ground


1. Combine the tomatoes, red onion, jalapeno, cilantro, and lemon juice in a small bowl and stir to combine. Season with salt and pepper to taste.
2. Let sit at room temperature for 30 minutes before serving, to allow the flavors to develop. If making in advance, refrigerate, covered, for up to 5 days.
