Colorful Fruit & Veggie Maki Rolls

3 cups cold cooked brown sushi rice
10 sheets of nori
20 each asparagus spears, steamed until just tender
2 each mangos (or 3 peaches), peeled and julienned
10 each Scallions
1 each red pepper, seeds removed and julienned
3 cups Water (Sushi rice)
1 1/2 cups short-grain brown rice (Sushi rice)
1/4 cup mirin (rice wine) (Sushi rice)
2 teaspoons rice vinegar (Sushi rice)


To prepare sushi rice: Bring water and rice to a boil in a saucepan Cover, reduce heat, and simmer until water is absorbed, about 15 minutes. Spoon rice into a large shallow dish and stir in mirin and rice vinegar. Allow mixture to cool. While the rice is cooling, prepare your filling ingredients.
Ready to roll:1. Lay one sheet of nori (shiny side down, perforated strips horizontal) on a clean, dry surface. Spread sushi rice over nori, leaving about a 1/2-inch strip at the top of the sheet.
2. Place 1 piece of each filling ingredient about 1 inch from the bottom of the sheet. Beginning with the edge closest to you, roll the nori around the filling, applying pressure as you go. Slice the roll into 8 pieces and serve with lite soy or dipping sauce.
