6 cups Napa cabbage, shredded
1 large cucumber, peeled and chopped
4- 6 each carrots, peeled and grated/shredded
1 each garlic clove
1 tablespoon ground ginger
1/4 teaspoon Crushed red pepper
1/4 cup peanut butter
1 tablespoon Soy sauce
2 tablespoons rice vinegar
3 tablespoons Water


1. In a large salad bowl, combine first 3 ingredients.
2. To make dressing, mince garlic and ginger in food processor. Add remaining ingredients and process until smooth (about 1 minute).
3. Add the dressing to the salad mixture, toss and serve.
