Roasted Root "Fries"

2 each parsnips
2 each turnips
2 each carrots
1 large sweet potato or yam
1 teaspoon salt
1 teaspoon cumin
1 teaspoon paprika
1 tablespoon Olive oil


1. Preheat oven to 450-degrees. Cut root vegetables into matchsticks and place in single layer on clean kitchen towel.
2. Sprinkle vegetables with salt and let sit for 5 - 10 minutes. Pat dry. Toss with cumin, paprika and olive oil.
3. Roast in single layer on cookie sheet or jelly-roll pan until crisp-tender, about 20 minutes.
