Mango Pork and Asparagus Stir-Fry

Ingredients

1 lb Pork tenderloin, sliced into 1/4-inch thick slices
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil or peanut oil, divided
1 lb asparagus, ends trimmed and sliced into thirds
2 each Garlic cloves, thinly sliced
1/4 cup water
2 cups chopped mango, fresh or frozen
1/4 teaspoon Crushed red pepper flakes
1 teaspoon grated orange zest
2 tablespoons orange juice
Mango Pork and Asparagus Stir-Fry

Directions

1. Place sliced pork in a bowl and toss with salt and pepper. Heat a wok or large skillet over high heat. Add 1 tablespoon of the oil, swirl to coat, and add pork. Cook, stirring, until pork just loses its pink color, about 2 to 3minutes. Transfer pork to a plate.
2. Add remaining 1 tablespoon. oil to wok or skillet, swirl to coat, and add asparagus, garlic, and water. Cook until asparagus is crisp-tender, about 3 minutes, stirring often.
3. Return pork to wok and add mango, red pepper flakes, and orange zest; cook 1 minute, stirring often, until everything is heated through. Remove from heat, stir in orange juice, and serve.
