Updated Mission Chicken

Ingredients

2 tablespoons Fresh lemon juice
1 each Shallot, finely chopped
1 tablespoon cornstarch
1 teaspoon Inspirations Garlic Dipping oil
1 teaspoon Minced garlic
3/4 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon Inspirations Monterey Citrus Pepper dry rub
1/4 teaspoon ground cinnamon
1/4 teaspoon Inspirations Fleur de Sel sea salt, or to taste
1/8 teaspoon Crushed red pepper flakes
2 tablespoons water
1 ( 2 lb.) pkg Inspirations Boneless skinless chicken thighs, about 8
1/3 cup golden Raisins
1 medium navel orange, washed well and halved
1/2 cup Sliced almonds, toasted
2 tablespoons thinly sliced Nature's Place Organic Fresh chives
1/4 cup green olives, pitted and sliced
2 or 3 each orange wedges (optional garnish)

Directions

1. In a medium bowl, combine lemon juice, shallot, cornstarch, oil, garlic, coriander, paprika, rub, cinnamon, salt, red pepper flakes, and water; whisk to combine.
2. Place chicken and raisins in a slow cooker. Add spice mixture and stir well; chicken should be evenly coated. Wedge the orange halves into the chicken mixture.
3. Cover and cook 8 hours on low or 4 hours on high.
4. Transfer chicken to a plate. Remove orange halves and let cool a few minutes. When orange halves are cool enough to handle, squeeze the juice from each half into the slow cooker and stir well to incorporate into the sauce. Discard the peel.
5. To serve, divide chicken among 4 plates. Top each with an equal amount of sauce and garnish with almonds, chives, olives, and orange wedge, if desired.
