Quinoa Bars

Ingredients

7 cups old-fashioned oats
1+1/2 cups oat bran
1/2 cup ground flaxseeds
1 tsp. salt
4 tsp. ground cinnamon
1/2 tsp. ground allspice
1 tsp. ground nutmeg
1 tsp. baking soda
3/4 cup sugar and stevia blend (such as Domino Light or Pure Via)
1 cup canola oil
2 Tbsp. molasses
2 eggs, lightly beaten
2 cups pumpkin puree
3 very ripe bananas, mashed
2 Tbsp. nonfat plain yogurt
1/4 cup vanilla extract
1 cup cooked and cooled quinoa
1 cup finely chopped walnuts
1 cup raisins

Directions

1. Preheat oven to 350 degrees F. Spray an 18-by-12-inch or other large rimmed baking sheet or jelly-roll pan with canola oil cooking spray.
2. In a very large bowl (or 2 large bowls), combine oats, oat bran, flax, salt, cinnamon, allspice, nutmeg, baking soda, and sugar-stevia blend. Mix well.
3. In a separate large bowl, blend together oil, molasses, eggs, pumpkin, bananas, yogurt, vanilla, and quinoa until thoroughly combined. Add to oat mixture and stir to blend thoroughly. Stir in walnuts and raisins until well distributed.
4. Pour batter into prepared pan and bake until lightly browned and a tester inserted near the center comes out clean, about 30 to 35 minutes. Cool on a wire rack. 5. Cut into small bars and serve.
