Triple Berry Clafoutis

Ingredients

A clafoutis (cla-FOO-tee) is closer in texture to a custard than a cake or pancake. Many recipes call for a baking dish , but we love the crisp, golden crust that comes from pouring the batter into a preheated skillet before baking.
1 Tbsp. unsalted butter
1 cup whole milk
2/3 cup sugar
3 large eggs
1/2 Tbsp. vanilla extract
1/4 tsp. salt
1/2 cup all-purpose flour
1/2 cup fresh blackberries
1/2 cup fresh raspberries
1/2 cup quartered fresh strawberries
Confectioners' sugar, to serve

Directions

Preheat oven to 350 degrees F. Rub a 10" cast-iron skillet with butter and place in oven to preheat.
To a blender or food processor, add milk, sugar, eggs, vanilla, salt and flour. Blend on high 1 minute, until smooth.
Using oven mitts, carefully remove hot pan from oven and pour in batter. Scatter blackberries, raspberries and strawberries evenly over batter. Bake 40 to 45 minutes, until top of clafoutis is puffed and golden, and a toothpick inserted into center comes out clean. Let clafoutis cool in skillet. Dust with confectioners' sugar to serve.
Tip: When testing doneness, be sure not to insert your toothpick into a berry. Serve for dessert with a dollop of whipped cream, or for breakfast with a dollop of yogurt.
