Salmon with Cilantro Pesto

Ingredients

1 cup Fresh cilantro leaves, packed
1 each Fresh garlic cloves
1/4 cup Chopped walnuts
1/4 cup Extra virgin olive oil
1 teaspoon Oil, olive, extra virgin
1/4 teaspoon Salt
1/8 teaspoon Black pepper, freshly ground
1 lb Fresh salmon, cut into equal fillets, room temperature
1 each Fresh medium limes, cut into quarters
Salmon with Cilantro Pesto

Directions

1. Make cilantro pesto. Put cilantro leaves, garlic, nuts, 1/4-cup of the oil, salt, and pepper in blender or food processor. Blend at high speed until ingredients are combined. Taste and adjust seasonings.
2. Preheat broiler; line broiler pan with foil and spray with vegetable spray.
3. Place fillets skin side down on broiler. Brush surface of fish with remaining oil. Broil until just barely cooked through; check after 5 to 8 minutes. Tent the fish with foil to finish cooking. Spread pesto evenly over fillets (you may have some left over).
4. Serve salmon warm or at room temperature, garnished with lime quarters.
