Ingredients

Beef Roast with Two Sauces
3 lb Hannaford Inspirations Angus Beef Eye Round Oven Roast
1 teaspoon Thyme
1/2 teaspoon Salt
1/2 teaspoon Black pepper, freshly ground
1 each Garlic clove, peeled
1/4 cup Hannaford Inspirations Smoky Horseradish Sauce
1/2 cup Light mayonnaise
1 tablespoon Fresh chives
1/3 cup salsa
1 tablespoon Capers

Directions

1. Preheat oven to 450 degrees F. In a small bowl combine thyme, salt, pepper and garlic. Place roast in a small roasting pan. Rub entire surface with herb mixture.
2. Roast beef in hot oven 10 minutes. Reduce heat to 325 degrees F and roast 25-30 minutes per pound or until meat thermometer inserted into the thickest part reads 130 degrees F for medium-rare. Meanwhile, prepare sauces. For smoky horseradish sauce: In a small bowl combine smoky horseradish sauce, 1/2 of your mayonnaise and chives until blended. For roma tomato sauce: In small bowl combine roma tomato bruschetta, remaining mayonnaise and capers until blended.
3. Thinly slice beef roast. Serve with sauces.
