Spinach and Cheese Squares One Star

Spinach and Cheese Squares
2 each Large egg
6 tablespoon Whole wheat flour
10 oz Frozen chopped spinach, thawed, drained well
2 cup Cottage Cheese, low fat
16 oz Cheddar cheese, reduced-fat
1/2 teaspoon Black pepper, freshly ground
1/8 teaspoon Cayenne pepper
1 tsp ground nutmeg
3 tablespoon Wheat, germ


1. In a large bowl, beat the eggs with the flour until the mixture is smooth.
2. Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a nonstick coated 13x9x2-inch baking pan.
3. Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.
4. Let stand for about 10 minutes and then cut into 1-1/2-inch squares for serving.
