Spicy Tofu Dip

Ingredients

This spicy dip goes especially well with vegetables, such as Belgian endive and celery sticks, and its pale orange hue looks attractive in a bowl. Extend the vegetable theme by serving it in a hollowed-out bell pepper - slice off the stem end and remove the seeds. It also makes a tasty topping for cooked rice.
1 (16-oz.) pkg. silken tofu, soft, drained
1/2 cup Inspirations Mango Chutney
1/2 tsp. curry powder
1 scallions, chopped fine
Spicy Tofu Dip

Directions

1. Place tofu in a blender or food processor. Add chutney. Process until smooth, about 2 minutes.
2. Place dip in a bowl. Stir in curry powder and scallion. Mixture will be slightly thin, but will firm up as it chills. Cover, and chill at least 1 hour. Serve chilled.
