Herbed Filet of Beef Tenderloin

Herbed Filet of Beef Tenderloin
8 oz Broiled beef tenderloin filet mignon, 1/8" trim
1/4 teaspoon Salt
1/4 teaspoon Black pepper
1 tablespoon Olive oil, salad or cooking
11/2 tablespoon Fresh thyme
1 1/2 tablespoon Fresh rosemary


1. Preheat oven to 500 degrees F.
2. Pat filets dry with a paper towel and season on both sides with salt and pepper.
3. Mix thyme and rosemary together and spread out evenly on a plate; set aside.
4. Add oil to an oven-safe, medium sized saute pan and place over high heat until oil begins to smoke.
6. Sear filets until nicely browned, 2 to 3 minutes each side; after browning filets, press both sides of each filet in herb mixture.
7. Return filets to the pan and place filets in oven, bake filets about 6 to 12 minutes.
8. Proper internal temperature for food safety should be 145 degree F. for medium rare, 170 degree F. for well done.
9. Remove filets from oven, cover loosely with a foil tent, and let rest for approximately five minutes so juices do not run out of meat.
