Good For You Cornbread
31/4 tablespoon White, bolted cornmeal, self rising
31/4 tablespoon All purpose white flour
21/2 teaspoon Sugar
1/4 teaspoon Baking powder, low sodium
31/4 tablespoon Cultured low fat buttermilk
1/4 each Large whole eggs, raw
21/2 teaspoon Margarine, 80% fat
1/4 teaspoon Low saturated fat vegetable oil


1. Preheat oven to 350 F.
2. Mix together cornmeal, flour, sugar, and baking powder.
3. In another bowl, combine buttermilk and egg. Beat lightly.
4. Slowly add buttermilk and egg mixture to dry ingredients.
5. Add margarine, and mix by hand or with mixer for 1 minute.
6. Bake for 20-25 minutes in an 8- by 8-inch, greased baking dish. Cool. Cut into 10 squares.
