Ingredients

Quick Finish for Truffles
1/2 cup Dutch processed unsweetened cocoa powder, sifted, divided
1/4 teaspoon Cinnamon, ground
1/2 teaspoon instant espresso powder

Directions

Traditionally, truffles are rolled in cocoa,making them resemble their mushroomnamesake. You can use sweetened or unsweetenedcocoa, or confectioners' sugar,with spices or coffee added for flavor, ifdesired.
1. Place cocoa or confectioners' sugar ina small bowl. If desired, stir in cinnamon,espresso powder, or both.
2. Remove truffles from freezer. Roll a fewat a time in cocoa or confectioners' sugar.Serve immediately, or place in an airtightcontainer and store in fridge for up to oneweek or freezer for up to one month.
