Prosciutto-White Nectarine Salad

Ingredients: Add ingredients to List

2 each white-flesh nectarine, pitted and sliced
3 cup arugula, rinsed and dried
6 slices prosciutto, cut in half
1/2 cup Parmesan cheese, shaved
1/4 cup Balsamic vinegar
1/4 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon Garlic power
1 teaspoon light brown sugar
3/4 cup olive oil

directions:

In a jar with a screw top lid, shake together the balsamic vinegar, oregano, salt, pepper, garlic powder, and brown sugar until combined. Add in the olive oil and shake again. Set aside.
Wrap each slice of nectarine in a piece of prosciutto. Arrange the nectarines on top of a bed of arugula. Sprinkle with the shaved parmesan.
Shake the Balsamic Vinaigrette again, and then drizzle over the salad.
