Underwood Farm Gazpacho
3/4 cup Tomato vegetable juice, low sodium
11/2 each Shushan Select All Natural Tomatoes, finely chopped
1/4 each Green bell pepper, chopped
1/4 each Cucumber, finely chopped
1/4 cup Finely chopped celery
1/4 cup Scallions, chopped, both green and white parts
21/4 teaspoon Red wine vinegar
11/2 teaspoon Olive oil
1/4 teaspoon Salt
3/4 teaspoon Chopped fresh parsley
3/4 each Cloves garlic, minced
1/8 teaspoon Black pepper, freshly ground
1/8 teaspoon Hot pepper sauce

directions:

1. In a large non-reactive bowl, combine juice, tomatoes, bell pepper, cucumber, celery, scallions, vinegar, olive oil, salt, parsley or cilantro, and garlic. Cover and refrigerate at least 4 hours or overnight.
2. Just before serving, add black pepper and hot pepper sauce. Serve chilled.
