Mediterranean Fish Soup
1 tablespoon Olive oil
1 cup Chopped onion
1 each Garlic cloves, crushed
2 each Tomatoes, cored and quartered
1 each Celery stalks, sliced
1 each Orange, grated zest
1 oz dried bay leaf
16 oz Large Idaho potatoes, peeled and sliced thin
1 lb Flounder fillets, fresh, cut into 3 inch pieces

directions:

1. Heat oil in large soup pot over medium heat.
2. Sauti the onion until soft, about 3-4 minutes. Add garlic and sauti 1 minute.
3. Add tomatoes, celery, orange zest, bay leaf, pepper, and chicken broth. Cook until the vegetables are soft; remove bay leaf. Puree in blender.
4. Put broth back on stove and cook the potatoes for 7 minutes. Add fish and cook until fish and potatoes are done, about 10 minutes.
