Roasted Veggie Quesadillas

Ingredients: Add ingredients to List

2 each small (or 1 medium-large) zucchini,or yellow squash, diced
1 each small sweet potato, diced
1 small to medium onion, chopped
1/2 each red pepper, diced
1 tablespoon olive oil
2 each Cloves garlic, minced
1/4 teaspoon salt
1 dash pepper
2 teaspoons cumin
8 each small whole-wheat Flour tortillas
2 cups shredded 2% sharp cheddar cheese
1 cup prepared salsa

directions:

1. Preheat oven to 450 degrees. Place vegetables in a glass baking dish, toss with olive oil and garlic, and sprinkle with salt, pepper and cumin. Roast in oven for 15 minutes or until tender.
2. Preheat skillet and brush with a thin layer of olive oil. Place one flour tortilla on skillet. On one half of tortilla, add 1/3 of a cup of veggies and 1/4 cup cheese.
3. Fold in half over veggies and cheese. Flip when tortilla starts to brown slightly and get crisp.
4. Brown the other side and be sure cheese is nicely melted. Repeat with other tortillas. Serve with prepared salsa and pinto beans.
