Steamed Mussels wtih Fresh Herbs and Wine Sauce

2 tablespoon butter
2 large Fresh shallots, chopped
1 large garlic clove, minced
2 stalk Finely chopped celery
1 medium tomato, seeded and chopped
4 lb mussels, cleaned and bearded
1 teaspoon Fresh thyme, minced
2 tablespoon Finely chopped parsley
1 1/2 cup dry white wine
1/4 teaspoon ground black pepper

directions:

1. Melt butter in pot large enough to hold all mussels over medium heat. Add shallots, garlic, celery and tomato; cook stirring until vegetables are tender, about 5 minutes.
2. Add mussels, sprinkle with thyme, parsley and pepper. Pour wine over the mussel mixture and cover tightly. Bring to boil over high heat and steam mussels 3-6 minutes, until they open.
3. Remove from heat, toss mussels with liquid in pot. Discard any mussels that have not opened. Spoon mussels into serving bowls along with some broth. Serve with crusty bread.
