Swedish Meatballs
1/4 cup Red wine
3/4 cup fresh bread crumb
8 teaspoon Milk, 2%, protein fortified, with vit D
1/4 cup yellow onion, chopped
1 1/2 teaspoon Butter, unsalted
6 oz ground veal, raw
6 oz Ground pork
1/2 each Extra large whole eggs, raw
2 tablespoon Canned beef bouillon/broth, low sodium
1/2 teaspoon Onion powder
1 teaspoon Fresh thyme
1 teaspoon Fresh rosemary
1 teaspoon Fresh parsley, chopped
3/4 teaspoon Kosher Salt
1/4 teaspoon Black pepper, ground
1/4 teaspoon Nutmeg, ground
1/8 teaspoon Paprika
1/2 cup Sour Cream, cultured
1/2 cup Canned beef gravy

directions:

1. In small saucepan, simmer wine over medium heat until reduced to about half. Soak bread crumbs in milk. Sauti onion in butter until golden.
2. Mix softened bread with meat, sautied onions, egg, beef broth, wine, onion powder, chopped herbs and seasonings.
3. Preheat oven to 325-350 degrees F. Roll petite meatballs (about 1 in diameter) and bake on a cookie sheet for 20-25 minutes until golden brown. Transfer to chafing dish for serving.
4. Mix gravy and sour cream well in a frying pan, over medium heat for 5-10 minutes or until mixture is thick and bubbly. Pour over cooked meatballs. Garnish with chopped herbs.
Tip: Prepare sour cream and gravy sauce while meatballs are baking. Try browning meatballs in a frying pan, with a little unsalted butter before placing on cookie sheet. Proper internal temperature for food safety should be approximately 160 degrees F.
