Thai Chicken Satay

1 lb boneless skinless chicken breast, havles
2 whole garlic cloves, minced (divided)
4 teaspoons sugar (divided)
2 tablespoon asian-style fish sauce, available in your market's international foods aisle
3 tablespoon fresh lime juice (divided)
1 1/4 teaspoon cumin (divided)
4 tablespoons lemon grass, finely minced
1 tablespoon Cliantro leaves, minced or 1 teaspoon Spicy Peanut Sauce
1 tablespoon safflower oil
1/2 cup red onion, chopped
1/2 cup peanuts
3/4 cup coconut milk
1/4 teaspoon salt
1 tablespoon reduced-sodium soy sauce
1/2 tablespoon hot chili sauce, to taste

directions:

1. Soak 4 bamboo skewers in water an hour
2. Place chicken between sheets of waxed paper and pound gently to flatten slightly. Cut chicken in diagonal strips about 1/2-inch thick. In shallow pan, place garlic, sugar, fish sauce, lime juice, cumin, lemongrass or rind, and cilantro. Stir to mix well. Add the chicken into mixture, turning to coat. Place in baking dish, cover, and refrigerate two hours to overnight.
3. Thread a marinated chicken strip onto each skewer. Cook chicken on prepared grill, about 3 minutes per side or until no longer pink inside.
4. For sauce, place safflower oil in small skillet over medium heat. Add onion, garlic, and lemongrass or lemon rind. Cook and stir 3 minutes and remove from heat. In food processor, chop peanuts, then add onion mixture, coconut milk, cumin, sugar, lime juice, salt, soy sauce, and hot chili sauce. Process until smooth. Serve chicken with Spicy Peanut Sauce.
