Beef Paprikash
1 lb Boneless beef top sirloin steak, 3/4 inch thick
4 teaspoon Vegetable oil
1 tablespoon Minced garlic
4 cup Egg noodles, yolk-free and uncooked
8 oz Fresh sliced mushrooms
2 cup Chopped onion
3 tablespoon Paprika
2 tablespoon Water
3/4 cup Beef broth, ready-to-serve
1 cup Frozen green peas
1/2 cup Sour cream, lowfat
1/2 cup Chopped fresh tomato

directions:

1. Cut beef steak length-wise in half, then crosswise into <-inch thick strips.
2. Heat 2 tsp. oil in large nonstick skillet over medium-high heat until hot. Add half of beef and half of garlic; stir-fry 1 to 2 minutes or until outside is no longer pink. Remove from skillet. Repeat with remaining beef and garlic. Season with salt and pepper. Set aside.
3. Cook noodles according to package directions.
4. Meanwhile, heat 2 tsp. oil in same skillet over medium-low heat until hot. Add mushrooms, onions, and paprika; cook 12-14 minutes or until vegetables are tender; stirring occasionally. If pan becomes dry, add water a tbsp. at a time. Stir in broth, bring to a boil. Reduce heat and simmer 3 minutes. Add peas; simmer another 2 minutes or until peas are tender. Return beef to skillet; stir in sour cream. Cook until heated through. Do not boil.
5. Serve beef mixture over noodles. Top with tomatoes.
