1 lb ground beef
1/4 cup finely chopped onion
1 each jalapeno pepper, minced
2 tablespoons finely chopped fresh Cliantro leaves
1/2 cup shredded mexican chihuahua, divided
4 whole tortillas, warmed or hamburger buns, split, toasted
3 pieces of leaf lettuce (topping optional)
1 whole tomato, chopped (topping optional)
1 whole avocado sliced (topping optional)
1 cup mexican home style salsa (topping optional)
1 cup sour cream,(topping optional)
1 cup frozen avocado dip

directions:

1. Combine ground beef, onion, jalape?o, cilantro and 1/4 cup cheese in medium bowl, mixing lightly but thoroughly. Lightly shape into four 1/2-inch thick patties.
2. Heat large nonstick skillet over medium heat until hot. Place patties in skillet; cook 10 to12 minutes to medium (160degreesF) doneness, until not pink in center and juices show no pink color, turning occasionally. About 3 minutes before burgers are done, top evenly with remaining 1/4 cup cheese.
3. Place burgers in tortillas or buns; season with salt and black pepper, as desired. Top with desired toppings.
Cook's Tip: To charcoal grill, place patties on grid over medium, ash-covered coals. Grill, uncovered, 11 to 13 minutes to medium (160degreesF) doneness, until not pink in center and juices show no pink color, turning occasionally.
Cook's Tip: To gas grill, preheat grill according to manufacturer's directions for medium heat. Grill patties, covered, 7 to 8 minutes to medium (160degreesF) doneness, until not pink in center and juices show no pink color, turning occasionally.
