Savory Beef Pot Roast

2 1/2 lbs boneless beef chuck pot roast
1 teaspoon coarse salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
3 medium potatoes, peeled and quartered
8 each small Carrot, peeled and sliced
2 each small onions, cut into wedges
2 each Garlic cloves, peeled and mashed
1/2 cup Beef broth
1/4 cup red wine
3 teaspoon fresh dill weed
1/2 cup plain yogurt
2 tablespoons all-purpose flour

directions:

1. Trim fat from roast and season with the salt & pepper. Brown the roast on all sides in hot oil over medium-high heat. Place sliced vegetables in bottom of slow cooker. Drain fat from roast, and transfer to slow cooker, placing roast on top of vegetables. Cut roast if needed to fit into slow cooker. Add the beef broth and the red wine. Sprinkle roast with 2 teaspoons dill weed.
2. Cover and cook on High for 5 to 6 hours or on Low for 10 to 12 hours, until meat is tender. Transfer roast and vegetables to a serving platter, reserving juices. Cover roast and vegetables with foil to keep warm.
3. Pour cooking juices into a glass measuring cup and skim off fat. Measure 1 cup of the reserved juices. In a small saucepan, stir together yogurt, flour and remaining dill weed until well combined. Stir in the 1 cup of cooking juices. Cook and stir until thickened and bubbly. Serve meat and vegetables with sauce.
