Beef Spanish Rice

Beef Spanish Rice
1 lb Boneless beef top round, cut into 1/8 inch thick strips
2 tablespoon Lime juice
1 teaspoon Chili powder
2 teaspoon Minced garlic
2 teaspoon Vegetable oil
1/8 teaspoon Salt
1/4 teaspoon Black pepper
1 cup Chopped onion
1 cup Chopped green bell pepper
2 cup Water
1 cup Uncooked white rice
1 teaspoon Ground cumin
141/2 oz Canned, diced tomatoes and green chilies, undrained
15 oz Canned black beans, rinsed, drained

directions:

1. Combine lime juice, chili powder, and 1 tsp. Garlic in medium bowl. Add beef, tossing to coat.
2. Heat 1 tsp. oil in large nonstick skillet over medium-high heat until hot. Add half of the beef; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. Remove beef from skillet. Repeat with remaining beef. Season beef with salt and pepper; keep warm.
3. Heat remaining 1 tsp. oil in same skillet until hot. Add onion, bell pepper, and remaining 1 tsp. garlic; stir fry 2-3 minutes or until crisp-tender. Stir in water, rice, and cumin; bring to a boil. Reduce heat; cover and cook according to rice package directions. Add tomatoes to cooked rice, and cook covered for 3-5 minutes or until most of liquid is absorbed, stirring occasionally.
4. Add beef and beans; cook and stir 1-2 minutes or until heated through. Season with salt and pepper, as desired. Serve with garnished cilantro and lime wedges, if desired.
