Banana Muffins
1 cup Flour
1/2 cup Sugar
2 teaspoon baking powder
1/4 teaspoon Salt
21/2 tablespoon Unsweetened baking cocoa powder
12 oz Nature's Place Good Health Cereal
11/2 cup Nonfat Milk
1/4 cup Honey
2 each Egg whites
1/8 cup Applesauce, unsweetened
6 oz Ripe bananas, mashed with a fork

directions:

1. Preheat oven to 400 degrees F.
2. Combine flour, sugar, baking powder, salt and cocoa powder. Set aside.
3. In separate bowl, mix cereal, milk and honey. Let sit until cereal becomes soft. Add egg whites and applesauce, then beat until mixed. Add mashed bananas until blended.
4. All at once add dry ingredients and stir until just combined. Lightly spray (twelve) muffin cups. Fill to 2/3 full. Bake 20 to 25 minutes or until lightly browned.
