Chocolate-Walnut Soda Bread
1 cup White whole wheat flour
3/4 cup Sugar
13/4 cup All purpose flour
1/2 cup Unsweetened cocoa powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 each Eggs, beaten
11/4 cup Cultured buttermilk, reduced fat
1/2 cup Finely chopped walnuts
1/2 cup Semi sweet chocolate baking chips/morsels

directions:

Walnuts are a terrific source of those importantomega-3 fatty acids you read abouteverywhere. Not only do these fatty acidshave anti-inflammatory benefits to the body,but also there?fs promising evidence that adiet of foods rich in omega-3s can boostmood and combat depression. A modestamount of dark chocolate can also help liftyour mood if it's chocolate you crave. Try apiece of this hearty bread with nonfat creamcheese. May be frozen.
Note: If you don't have buttermilk on hand,add 1 Tbsp. white vinegar to a scant 11.4 cupsskim milk to substitute.
1. Set oven rack to middle of oven and preheatto 350degreesF. Spray an 8-inch round cakepan with cooking spray, then line bottomof pan with a round of parchment paper.Spray paper lightly with cooking spray.
2. In a medium mixing bowl, whisk togetherflours, sugar, cocoa, baking soda, andsalt. Stir beaten egg into buttermilk, thenpour buttermilk mixture into flour mixture.Using a wooden spoon, stir batter just untilflour is barely incorporated. Dough will bethick. Add nuts and chocolate chips, if using,and stir just until combined.
3. Pour batter into prepared cake pan. Witha sharp knife, cut an X across top of bread.Bake for 45 minutes or until a woodenskewer poked into middle of bread comesout clean. Cool bread in pan on wire rackfor 10 minutes. Serve warm or at roomtemperature. Wrapping bread well in plasticwrap will keep it fresh for a day.
