Chicken Parmesan with Zucchini

4 boneless skinless chicken breast, (about 1 1/4 lbs.)
1/2 cup bread crumbs, plain
3/4 cup Parmesan cheese, grated
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried basil
6 tablespoon Butter, melted
1 each Fresh small zucchini squash
2 cup marinara sauce
1 1/2 cup low-fat mozzarella, shredded

directions:

1. Preheat oven to 400 degrees.
2. Combine breadcrumbs, Parmesan cheese, salt, thyme and basil in small bowl. Pound chicken between two sheets wax paper to flatten slightly. Cut each breast into two pieces.
3. Dip each piece chicken into melted butter then coat with bread crumb mixture. Place in a single layer on a baking tray. Bake 20- 25 minutes or until cooked through.
4. Meanwhile using a sharp vegetable peeler, slice zucchini into 8 thin strips lengthwise, reserve remaining zucchini for another use, set aside.
5. Transfer cooked chicken to 9 X 13-inch baking dish. Top each piece chicken with one zucchini strip. Pour marinara over chicken and zucchini. Top with mozzarella and Par-mesan cheeses. Reduce oven temperature to 350 degrees and bake 8 - 10 minutes to melt cheese.
