Chicken with Sun Dried Tomato Cream Sauce
16 oz coarse-grained semolina
2 tablespoon shallot 2
2 whole Fresh garlic cloves, minced
1/4 cup Parsley, fresh, minced
4 tablespoon Hannaford Inspirations Rosemary Dipping Oil
1 cup Light whipping cream
1/3 cup Hannaford Inspirations Sun Dried Tomato bruschetta
8 each Hannaford Inspirations Thin Sliced Breast Cutlets

directions:

1. Heat 3/4 of dipping oil in large skillet over medium high heat. Add chicken and saute (in batches) until cooked through, about 3 minutes per side. Transfer to platter to keep warm.
2. Add remaining oil to skillet. Add bruschetta, shallot and garlic to pan. Reduce heat to medium and saute, 5 minutes. Add cream, increase heat and boil until sauce thickens slightly, about 3 minutes. Return chicken to pan to heat through. Sprinkle with parsley and serve with sliced bread.
