Tropical Fruit Salsa
11/2 teaspoon Oil, olive, extra virgin
1 3/8 teaspoon bottled minced garlic
3/4 cup Fresh whole medium red onion, 2 1/2"
6 tablespoon Fresh medium jicama
11/3 cup Fresh mango
11/3 cup Fresh pineapple, dices
7 tablespoon Juice, tropical mixed fruit
7 tablespoon Canned coconut milk
1/8 teaspoon Saffron
1 3/8 teaspoon chipotle chili
11/4 teaspoon Fresh cilantro leaves
3 tablespoon Canned sweetened dried coconut flakes
11/4 teaspoon Extra virgin olive oil
2/3 cup Fresh red onion, chopped
1/3 cup Fresh jicama

directions:

1. Heat oil in large sauti pan over medium heat; sauti garlic 1 minute.
2. Add onion, jicama, mango and pineapple; sauti 2 minutes.
3. Add tropical juice, coconut milk, tequila and saffron; cook for 5 minutes.
4. Reduce heat to low, cook for 2 minutes; stir in jalapeqo and continue to cook, allowing liquid to reduce, approximately 3 minutes.
5. Remove pan from heat and let cool slightly (some liquid will remain at this point, but mixture will thicken upon resting).
6. Stir in cilantro (and optional coconut); refrigerate until ready to serve.
