Spiced Pear Cranberry Cake
2 each Pears, fresh, bosc, peeled, cored, cut into slices
1/2 teaspoon Lemon zest
1 teaspoon Fresh lemon juice
1/2 teaspoon Ground ginger
1/4 teaspoon Cinnamon, ground
1/4 cup Unsalted butter
1/2 cup Milk
3 each Egg
11/4 cup All purpose flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 cup Sugar
1/4 teaspoon Salt
1/2 cup Fresh cranberries

directions:

1. Preheat oven to 350degreesF. Spray a 9-inchround cake pan with vegetable cooking spray.
2. In a medium bowl, mix pears withlemon zest, lemon juice, ginger, and cinnamon.Set aside.
3. In a medium saucepan, melt the butter.Remove from heat and cool 5 minutes.Whisk in the milk and eggs.
4. In a large mixing bowl, combine flour,baking powder, baking soda, sugar, and saltand mix well. Add the butter mixture andstir to combine. Gently stir in the cranberriesand the pear mixture.
5. Pour batter into prepared pan. Bake at350degreesF for 35 to 40 minutes, until surfaceis pale gold and a toothpick inserted in thecenter comes out clean. Cool 5 minutes ona wire rack. Carefully transfer to a servingplate. Serve warm or at room temperature,garnished with whipped cream if desired.
