Slow Cooked Pumpkin Bread Pudding
1 tablespoon Butter, unsalted
3/4 cup Canned pumpkin puree (not pie filling)
11/4 cup Milk, 1%, with added vit A and D
3 each Large whole eggs, raw
2/3 cup Light brown sugar packed
3/4 teaspoon Cinnamon, ground
1 teaspoon Pumpkin pie spice
1 teaspoon Vanilla extract
1/4 teaspoon Salt
7 cup White sandwich bread, stale (cut 1 1/2 in cubes)

directions:

1. Grease the bottom and 2 inches of the sides of the slow cooker with the butter.
2. In a large mixing bowl, combine pumpkin, milk, eggs, brown sugar, cinnamon, pumpkin pie spice, vanilla extract, and salt. Whisk to combine.
3. Add the bread cubes to the custard mixture, and stir well to coat the bread pieces. Let the mixture sit for 5 to 10 minutes.
4. Add the bread pudding to the slow cooker. Use a rubber spatula to even out the bread pudding. Cover and cook for 3 hours on low.
5. Remove the lid and let bread pudding cool for at least 10 minutes. Serve warm with vanilla ice cream, if desired. Note: If you don't have stale bread on hand, lightly toast the bread before cutting it.
Slow cookers produce beautifully creamy bread puddings. For over-the-top decadence, substitute half and half for the milk.
