Vanilla and Honey Tapioca Pudding with Fresh Strawberries

1/3 cup small-pearl tapioca (not quick cooking)
3 cups organic Milk, divided
2 large egg yolks, lightly beaten
1/2 cup honey
1/4 teaspoon salt
1 teaspoon vanilla extract
1 handful Fresh strawberries, sliced for garnish

directions:

1. Place tapioca in a medium pot. Pour 1 cup of the milk over the tapioca. Stir and let it soak for 30 minutes.
2 . Whisk in remaining milk as well as the egg yolks, honey, and salt. Graduallybring mixture to a boil over medium heat, stirring often.
3 . When the mixture reaches a boil,immediately turn heat to low. Simmer, uncovered, for 15 minutes. Stir frequently to prevent scorching.
4 . Remove from heat and let pudding cool for 15 minutes. Stir in vanilla extract.
5 . Top with sliced fresh strawberries and serve warm or chilled.
