1. Preheat oven to 400 degrees. Spray 8 x 8-inch baking dish with cooking spray. Combine dry ingredients in a bowl and mix well.
2. In a separate bowl, combine milk, applesauce and egg and mix well. Add dry ingredients to wet ingredients and stir until blended.
3. Fold in red pepper, corn and cheddar cheese. Spoon batter into baking dish and bake 25 - 30 minutes until golden brown. Test for doneness by inserting a toothpick in the center. If it comes out clean, corn bread is done!
