Berry Manor Inn Tomato and Goat Cheese Breakfast Pie
7 each Egg
1/8 teaspoon Salt
1/8 teaspoon Black pepper, freshly ground
1/3 cup All purpose flour
1/4 cup Milk
2/3 cup Cottage cheese
1 cup Monterey jack cheese, shredded
1 cup Goat cheese, crumbled
1 tablespoon Shallot, finely chopped
1 each Sun dried tomatoes

directions:

1. Preheat oven to 325degreesF. Spray a 9-inch deep-dish pie pan with cooking spray.
2. In a large mixing bowl, beat eggs untilfluffy. Add salt, pepper, flour, and milkand whisk together. Add cottage cheese,Monterey Jack, goat cheese, shallot, andsun-dried tomatoes and mix well.
3. Pour into prepared pan and cover withfoil. Bake at 325degreesF for 1 hour or until topis golden brown. Let pie rest for 5 minutesbefore serving. Serve warm.
