Red Hot Fusilli
11/2 teaspoon Olive oil, salad or cooking
1 each Fresh garlic cloves
2 tablespoon Fresh parsley, chopped
2 cup Fresh large red tomatoes, chopped/sliced
11/2 teaspoon Fresh basil leaves, chopped
1 1/2 teaspoon Oregano, ground
1/8 teaspoon Salt
1/2 teaspoon Dried cayenne, ground
4 oz Whole Wheat fusilli, dry
4 oz Chicken breast, diced, grilled

directions:

1. Heat oil in medium saucepan. Saute garlic and parsley until golden.
2. Add tomatoes and spices. Cook uncovered over low heat for 15 minutes or until thickened, stirring frequently. If desired, add chicken and contniue cooking for 15 minutes until chicken is heated through and sauce is thick.
3. Cook pasta in unsalted water until firm.
4. To serve, spoon sauce over pasta and sprinkle with coarsely chopped parsley. Serve hot as a main dish and cold for next day's lunch.
