Southwestern Chicken with Honey Mustard, Lime, and Cumin
8 teaspoon Olive oil
1/4 teaspoon Minced garlic
1/4 cup Fresh lime juice
1/4 teaspoon Ground cumin
11/2 teaspoon Honey
1 tablespoon Hannaford Inspirations honey mustard
1/8 teaspoon Salt
2 lb Rotisserie chicken, chilled, about 1/1 a chicken
31/2 oz Hannaford Inspirations Baby Spinach
11/2 each Scallions, white and half the green parts, thinly sliced

directions:

1. Make dressing. In a medium mixing bowl, whisk together oil, garlic, lime juice, cumin, honey, mustard, and salt. Set aside.
2. Strip meat from chicken in large pieces and cut into bite size chunks. Place in a bowl and mix with half the dressing.
3. Line a serving platter with greens. Top with chicken, sprinkle with scallions, and drizzle with remaining dressing serve immediately
