California Walnut Turkey and Rice Salad
3 cup Cooked brown rice
16 oz Turkey breast, cooked and diced
1/2 cup Diagonally sliced celery
1/4 cup Canned pineapple chunks, drained
1/4 cup Mandarin Oranges, drained
2 oz Can waterchestnuts, drained, thinly sliced
1/4 cup Medium scallions, trimmed and thinly sliced
1/4 cup Chopped walnuts
6 cup Green leaf lettuce
4 oz Lemon yogurt, lowfat
1/2 cup Fat free mayonnaise
11 teaspoon Grated lemon peel or zest
1/2 teaspoon Curry powder

directions:

1. Combine all salad ingredients except the lettuce leaves, yogurt, mayonnaise, lemon rind and curry powder in a large bowl. Whisk together the yogurt, mayonnaise, lemon rind and curry powder.
2. Add the dressing to the salad mixture and toss to coat. Cover and refrigerate. To serve, spoon 1 cup of salad over 1 cup of the lettuce leaves
