Garden Potato Salad
20 oz fresh large potato with skin, 3" to 4"
31/4 tablespoon Celery, fresh, diced
4 3/4 teaspoon green onions, topped and bulbs chopped
11/4 teaspoon Fresh parsley, chopped
31/4 tablespoon Cottage cheese, 1% fat
71/4 teaspoon Nonfat/skim milk, calcium fortified
1 3/4 teaspoon lemon juice
1 1/4 teaspoon cider vinegar
1/8 teaspoon Celery seeds
1/8 teaspoon Dill weed, dried
1/8 teaspoon White pepper

directions:

1. In large bowl, mix potatoes, celery, green onion, and parsley.
2. Meanwhile, in a blender or food processor, blend cottage cheese, milk lemon juice3, vinegar, celery seed, dill weed, dry mustard, and white pepper until smooth. Chill for 1 hour.
3. Pour chilled cottage cheese mixture over vegetables and mix well. Chill for at least 30 minutes before serving.
