Homemade Cheese and Herb Croutons
1 cup soft white bread cubes
1 tablespoon roasted garlic extra virgin olive oil
1 tablespoon Butter, unsalted
3/4 each Fresh garlic cloves
1/4 teaspoon Fresh parsley, chopped
1/4 teaspoon Fresh rosemary
1/4 teaspoon Fresh chives
4 teaspoon Parmesan cheese, grated
1 pkg outer leaves of romaine lettuce
1/4 oz Oil free low calorie salad dressing

directions:

1. Melt butter with dipping oil in large skillet over medium-high heat. Add bread cubes and cook tossing 3-4 minutes. Reduce heat to low, add garlic and herbs and continue cooking. Tossing frequently, 20 minutes or until golden.
2. Transfer warm croutons to bowl. Add cheese and toss to coat. Cool to room temperature. Place baby romaine in large mixing bowl. Add 1/3 cup dressing. Top with croutons and serve. (Store remaining croutons in zipper bag for later use.)
